Does WebP work on every device?

Yes. Chrome, Edge, Firefox, Safari and every current mobile browser read it. Only versions from before 2020 are left out, and practically nobody runs those.

Which quality should I pick?

Between 80 and 85 is the sweet spot: the difference stops being visible and the file drops a lot. Above 90 the weight climbs with no visible gain.

Can I convert the whole batch?

Yes, and you can rename the series with a pattern along the way, which helps when the photos go into a catalogue or a shop.
